Ingredients for 2 people:
In the box
- 2 lemons yellow
- 20 gr of grated coconut
In the closet
- 105 gr of flour
- 75 gr of sugar
- 30 gr of butter
- 15 cl of milk
- 1 C. teaspoon of yeast
Lemon and coconut light muffins recipe
Preheat the oven to 180 ° C (Th.6).
- Melt the butter and weigh all the ingredients in the cupboard.
- Zest the lemons, set them aside, then squeeze out the juice of 1 ½ lemon.
In a salad bowl,
- Combine the flour, baking powder and sugar.
In another bowl,
- Mix the melted butter with the milk and lemon juice.
Dig a well in the first bowl with the dry elements and place the lemon mixture there.
- Mix well with a whisk.
- Add the lemon zest and coconut.
Fill individual molds and place in the oven for 15 to 20 min. depending on the type of oven.
Take the muffins out of the oven, unmold them and enjoy them warm or cold with a good tea or lemon verbena herbal tea!
